Super Easy BBQ Chicken Sandwiches

This a favorite meal around my house.  The husband and kids love it because it is delicious ...and I love it because it is so easy to make and requires very little time to prepare. Just a few minutes to prepare this in the morning and dinner is ready when you get home.  Not to mention your house will smell amazing!

Whenever I am cooking meat in my slow cooker I always slice an onion into thick wedges and layer in the bottom of the slow cooker.  It keeps the chicken from sticking on the bottom and keeps it from getting scorched and dried out.

Just cut the slices thick enough to keep the chicken or whatever meat you are cooking off the bottom of the pot.

Layer the onions in the bottom like this.  The onion also adds some extra taste to the meal.

Then just layer the boneless chicken breast on top of the onions in the bottom of the slow cooker.

This is my favorite sauce to use but whatever sauce you prefer is fine.

Just pour enough to cover the chicken breasts and then cover and let this simmer 6-8 hours on low or 3-4 hours on high.

Remove the chicken and shred the chicken apart using a couple forks.  Once I get the chicken shredded I add it back into the slow cooker and add some fresh bbq sauce and reheat it for about 30 minutes.

Serve it up on some fresh rolls or hamburger buns and enjoy!
