
What a great way to use up a fresh zucchini! I made this recently for the first time and was surprised that they really tasted a lot like crab cake (well, sort of!) My husband thought they tasted more like actual crab cakes than I did. But either way I still thought they were still very good!
Here's what you'll need:
Start by grating up the zucchini.
Then you'll need to squeeze out the excess moisture. If you own a salad spinner this works great to get out that moisture. If not using a clean kitchen towel to squeeze it out works just as well.
Combine all the ingredients in a large bowl.
Here's the secret ingredient...a little Old Bay Seasoning that will give them the crab cake flavor.
Serve with tartar sauce if you desire

Makes 6
Ingredients:
2 cups grated zucchini
1 cup bread crumbs
1/2 teaspoon salt
1 egg
1 tablespoon mayonnaise
1 teaspoon old bay seasoning
1 teaspoon dijon mustard
1/8 cup fresh parsley
2 tablespoon olive oil
Directions:
1. Grate the zucchini and squeeze out as much of the moisture as possible.
2. In a medium bowl combine the zucchini, bread crumbs, salt , beaten egg, mayonnaise, Old Bay seasoning, mustard and parsley.
3. Form into patties.
4. In a large skillet heat olive oil over medium heat. Cook the patties in hot oil about 4 minutes or until golden brown.
