Gourmet Chicken Ranch Pizza



My family loved this pizza.  I used a deli rotisserie chicken and that made this even easier to make.  This is based on a recipe I found on Allrecipes.com.   The original recipe uses a refrigerated pizza dough crust but I made my own pizza crust.  The original recipe can be found by clicking here .



I used a package of Fleischmann's pizza dough yeast for the first time and I loved it!  There is no need to wait for it to rise like with regular yeast and it cooked up perfectly.  My family said it tasted like restaurant quality pizza. :)


I just followed the instructions on the back of the pizza dough yeast package to make the dough or you could just use a ready made crust. 


After you prepare the pizza crust; spread the ranch dressing over the crust, followed by mozzarella cheese, chicken,  diced tomatoes, green onion and the cheddar cheese.


This is the first time that I have made a pizza with cheddar cheese on a pizza along with mozzarella cheese and it was really good!  This had become my family's new favorite pizza.

Ingredients:
  Crust:
     1 3/4 to 2 1/4 cups all-purpose flour
     1 envelope Fleischmann's Pizza Yeast
     1 1/2 teaspoon sugar
     3/4 teaspoon salt
     2/3 cup very warm water (120 tp 130 degrees F)
     3 tablespoons oil
   Toppings:
     2 cups cooked shredded chicken
     1/2 cup ranch salad dressing
     1 cup shredded mozzarella cheese
     1 cup shredded cheddar cheese
     1 cup chopped tomatoes
     1/4 cup chopped green onions
    
Directions:
  1. Preheat oven to 425 degrees F (220 degrees C). Lightly grease a pizza pan or medium baking sheet.
  2. Combine 1 cup flour, undissolved yeast, sugar and salt in a large bowl.  Add water and oil.  Mix until well blended; about 1 minute.
  3. Add gradually, enough remaining flour until soft dough ball is formed.  Dough will be slightly sticky.
  4. Knead on a floured surfaced until smooth; about 4 minutes. Spread out dough to fit greased pizza pan.
  5. Spread ranch dressing over crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Bake for 20 to 25 minutes, until cheese is melted and bubbly.
